MAGNOLIA BUTTERCREAM FROSTING AND MOOSEWOOD'S SIX MINUTE VEGAN CHOCOLATE CUPCAKES


I was intrigued with the egg-less and dairy-less Chocolate Cake recipe from Moosewood, so I gave it a try and made cupcakes. This will be my go-to cupcake recipe. Don't skip the vinegar!  

I topped them with my favorite Magnolia Bakery Buttercream Frosting  This frosting really rocks! 

The elegant paper baking cups that you see are a gift from sweet Sarah at Hyacinth For The Soul. I cut the Moosewood cake recipe in half, and it made four cupcakes in these deep wrappers.  I am squirreling the rest away for a dinner party in November ;o)  They are very sturdy and can be used for dips, fruit, nuts, ice cream, etc.  The young gal next door loves cupcakes and the color yellow. Thus the two yellow frosted cupcakes were made for her.

  1. Isn't Sarah sweet! :D I love the little wrappers. My daughter and I ate lunch at Moosewood when we went to Aurora. We took a little side trip to Ithaca to check-out Cornell. It is on my daughter's short list for graduate school!

    I have two Moosewood cookbooks I love: The Enchanted Broccoli Forest, and Sundays at Moosewood.

  2. I LOVE those cupcake holders. I'm sitting here thinking of all the 18,999 ways I would use them! I have never had vegan cake. Hmmmm...I'm sure it's much healthier!!! Love the candles, too! Fun!!!

  4. Awwww how sweet of Sarah! Those wrappers just look like something you'd love. They remind me of your Courtley Check, only in stripe form!! Yummy cupcakes and lucky girl next door. I'm making the Marsala Chicken tonight and will let you know.

  9. Debbie, the cupcakes look delicious. I like the yellow icing! Will remember that for when I make my own. I have some of those cute candles too. They are perfect with these wrappers.
