Strawberry Season



Our strawberry season is coming to an end so on Father's Day we picked berries and froze the majority in single serving containers for Joe's morning smoothies. The fragrance filled the kitchen so I went looking for a couple recipes. Both recipes are so good that I had to share.  We enjoyed these Pecan and Coconut Strawberry Shortcakes from Savoring Time In The Kitchen. The recipe makes 10 shortcakes so I ended up freezing the rest for our 4th of July picnic.

Mario Batali sent me an email suggesting I try his Strawberry Mojitos. Wow, are these good. The recipe is below. The black pepper and ginger beer gave it a unique flavor. We both gave it five stars. 

INGREDIENTS

Makes 1 cocktail
3 ripe strawberries, hulled
5 fresh mint leaves
Freshly ground black pepper
2 tablespoons agave
2 jiggers rum
Splash of Ginger Beer

DIRECTIONS

Place strawberries, mint leaves and one grind of pepper in a mixing glass. Muddle or mash the ingredients in the bottom of a mixing glass until a paste forms.
Add the agave, rum and a splash of ginger beer to the glass. Mix well and enjoy for summer's first welcome sigh.

  1. Awwwwww I'm still smiling at that sweet picture of your baby with his baby!! Seeing the love and pride in our kid's faces is the best, isn't it?
    As for the strawberry pecan shortcakes and the mojitos...yes please! You picking strawberries brought back memories of Rich and I loading up the kids, when we lived in Ohio, and picking, and I'm sure the kids eating their fair share. Enjoy all the berries and happy summer, Debbie!

  5. I love the first pic Deb, great snap. Oh my goodness, what a strawberry patch. Nothing as good as really fresh picked. Your shortcakes look so pretty and I can imagine how delicious they are served up with your strawberries. Yes, I would love one of those cocktails, they are so pretty and summer perfect. What a great pic of your son and grandson. Love the little guy's name too…..

  7. I wish we had a place to pick strawberries nearby! I think they're even almost done here :(. Glad you tried the shortcakes and hope you enjoyed them! Love the photo of Xavier. He's getting big already!
