National Chocolate Ice Cream Day



The day is almost over and I just got home from work and my walk at the college. I didn't even realize it was National Chocolate Ice Cream Day until I was already at work and had no time to  indulge in chocolate ice cream.  The college has French Lilacs that are so fragrant, and it was a gorgeous evening. 


Instead, I pulled these Lavender Cookie Bars from the archives. I served these at my ice cream social several years ago. If you like lavender, these are fabulous. 


Debbie's Lavender Cookie Bars
2 1/4 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cups soft butter
1 cup brown sugar
1 egg
1 teaspoon vanilla
1 cup white chocolate chips
2 Tablespoons chopped lavender

In a medium bowl, mix together flour, baking soda and salt. In a large bowl, with electric mixer, beat together butter and sugar. Beat in egg and vanilla. Stir in flour mixture. Stir in chips. Spread evenly in an ungreased 15 x 10-inch shallow-rimmed pan. Bake at 350 for 25 minutes or until lightly browned. Let cool in pan. Cut into bars.

I topped my bars with black cherry ice cream. I opened the box of ice cream, and quickly cut it into slices. I placed the ice cream slices on a parchment lined cookie sheet, and put in the freezer until solid. Then I wrapped the slices individually with wax paper, and put in zip loc bags.


National Best Friends is June 8. Do something even more special for a friend.

  2. Your walk at the college must awake your senses of sight and smell, Debbie, and make you ready for coming home and enjoying a nice dessert, like your lavender bars. I had grandkids over yesterday, and they did enjoy a bowl of vanilla ice cream, with chocolate sauce, after swimming at my neighborhood pool. We should've made some chocolate ice cream!   4. Oh, yum! I love lavender and chocolate! Just read that Trader Joe's has a coffee ice cream sandwich made with brownie crisps and coffee ice cream. Adding it to my shopping list.

  6. Well, no wonder I had an ice cream craving last night! I rarely eat ice cream but was tempted by some chocolate gelato my son stashed in the freezer and thought I would just take a bite or two...wrong, I finally had to pry the near half empty pint from my spoon and put it back in the freezer! Luckily National Chocolate Ice Cream Day is only once a year!! Your lavender bars look heavenly!
