A delivery of California citrus was offered to me and arrived yesterday. Mr. Mountain Breaths called me at work while admiring the beautiful green box. We love anything "lemon" in this household. I drink a glass of fresh squeezed lemon juice in a glass of water first thing in the morning. Adding fresh lemon juice or lemon slices to hot or chilled water is a great way to naturally flavor water.
I will surely be looking for Limoneira lemons at Trader Joe's. I understand they will be available soon! I think Costco may also have them. I have never seen (or felt) such a beautiful lemon here in central New York. LOL

This is a shrimp dish that I make on a regular basis. I'll be making this tonight with these beautiful lemons.
Garlic Lemon Shrimp
Ingredients:
1/3 cup butter
1 1/2 to 2 pounds large shrimp, peeled and deveined
4 to 6 medium cloves garlic crushed and minced
1/3 cup chopped fresh parsley
2 1/2 tablespoons fresh lemon juice
Salt, to taste
Directions:
In a large skillet, heat butter over medium heat until butter stops foaming, about 30 to 45 seconds. Add the shrimp and garlic and sauté over medium heat, turning frequently until the shrimp just turn pink, about 4 to 5 minutes.
Add the parsley, lemon juice, and salt to taste; stir well. Remove the pan from the heat and serve.

Summit of Rocky Peak Ridge

We are Adirondack 46ers, which is an organization of hikers who have climbed all forty-six of the traditionally recognized High Peaks of the Adirondack Mountains. We are referred to as 46ers. We completed the 46 peaks on August 26, 2000. Click our picture for more information.

ReplyDeleteWarm lemon water, but with a dash of Tabasco is what I drink every morning, too, Debbie! What a wonderful gift to receive with the box of lemons. I bought a huge bag of lemons for $2.50 and have been making lots of lemony things. I'll try your shrimp recipe, too. I have a similar one, a recipe from Tyler Florence...shrimp scampi with linguine. Happy weekend to you, my friend!
ReplyDeleteOoh, Debbie, I am like you - LOVE lemons! I also drink lemons squeezed in my water first thing each day, and then all day. I keep fresh ones sliced in the fridge. Your recipe looks wonderful - pinning!
