Banana Butterscotch Cupcakes

I've had "The Cupcake Deck" since 2007, and it took me this long to make one of the cupcake recipes. I was craving banana bread after seeing so many loaves on social media. I came across the cupcake card recipe for Banana Butterscotch Cupcakes. Let me tell ya, these babies are divine! I guess they should be after seeing the butter they contain. I would not hesitate to make these again. They have the wow factor! 


INGREDIENTS YOU'LL NEED 




Cupcakes:
 1 1/4 cup unbleached all-purpose flour
 1/2 teaspoon baking powder 
1/2 teaspoon baking soda
 1/4 teaspoon salt 
 6 tablespoons unsalted butter, at room temperature
 1 cup sugar 
 2 medium bananas, broken into 1-inch pieces
 2 large eggs 
 1/2 teaspoon vanilla extract
 1/4 cup buttermilk (I used half and half)
 1 cup butterscotch chips
Frosting: 
 1/4 cup half and half 
 3/4 cup packed light brown sugar
 1/2 cup unsalted butter, at room temperature 
 1 cup powdered sugar 
 1/2 teaspoon vanilla extract 




DIRECTIONS 
Position the rack in the middle of the oven. Preheat the oven to 350 degrees. Line 12 muffin tin cups with paper cupcake liners. 

 Make the Cupcakes: Sift the flour, baking powder, baking soda, and salt into a medium bowl and set aside. 

In a large bowl, using an electric mixer on medium speed, beat the butter and sugar until well blended and creamy, about 2 minutes. Stop the mixer and scrape the sides of the bowl as needed during mixing. 

Add the banana pieces, mixing until they are blended into the mixture; you will still see some small pieces of banana. Add the eggs one at a time, mixing until each is blended. 

Add the vanilla and beat for one minute. On low speed, add half of the flour mixture, mixing just to incorporate it. Mix in the buttermilk. Mix in the remaining flour mixture until the batter looks smooth. Stir in the butterscotch chips.

Frost the cupcakes once they have cooled. These cupcakes really wowed me.

  5. Deb, this sounds delicious! I need to add butterscotch bits and buttermilk to my shopping list. I just made more banana bread loaves yesterday, so have used up my ripe bananas. I'm sure there will be more! I have some of those cute cupcake cupss and saucers too, but have never used them. You are inspiring me to pull them out! Happy Saturday!
