A little busy around here this week, but I did sneak in a trip to Paris for locally grown potatoes for my son's birthday dinner.
Scrubbed the Paris taters with my new vegetable brush that I am soooo loving. I received the vegetable scrubber in a gift bag from a dear friend. So now every time I scrub, I think of my friend Donna. Before we get started, here is the pretty bag of Paris potatoes ;o)

Anyhoo, get your potatoes cleaned, and I'll share my little tip on serving mashed potatoes, the FUN way.

Debbie's "Paris" Potatoes
1) Make your favorite mashed potatoes.
2) Slice the tops of dinner rolls (I usually use Kaiser rolls) and hollow out the centers.
3) Put a dollop of mashed potatoes inside the roll. Just before serving, warm them in a 350 oven. I garnish with crispy bacon bits and cheddar cheese.
And since I am NEVER too busy to make caramel popcorn for my guys, I whipped up a batch to take to Albany this weekend for a visit. I added some mixed nuts and it is very addictive!
I've named the recipe "My Sister Cheryl's Caramel Popcorn". She is doing a craft fair today, and sells it. She said she doesn't mind me sharing it with you.
Caramel Popcorn recipe
Ingredients:
1 cup butter
2 cups brown sugar
1/2 cup corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract
5 quarts popped popcorn
Directions:
1. Preheat oven to 250 degrees F (95 degrees C). Place popcorn in a very large bowl.
2. In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
3. Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.
Thank you for stopping by!
Debbie
