We are having cool mornings and evenings, and I was craving fall flavors. It didn't matter that everyone I know is on a diet. I just had to make this....it was calling my name.
If you are craving fall flavors, this will make you very happy :-) I froze several squares of it, and I'll probably be hitting the freezer tommorow!
Pumpkin Cobbler adapted from The Kingsley House Bed & Breakfast
1 large can pure pumpkin (or two small cans)
12 oz can evaporated milk
3 eggs
1 cup sugar
1 tsp salt
1 Tbsp cinnamon
1/4 tsp nutmeg
1/8 tsp ground cloves
1 large box yellow cake mix
1 cup chopped pecans (may omit)
3/4 cup melted butter
Mix first 8 ingreedients and pour into well-greased 9x13. Sprinkle cake mix on top, then pecans. Drizzle with butter and bake 50 minutes at 350 until set in middle. Spoon into ramekin or dessert dishes and top with a dollup of whipped cream.

Summit of Rocky Peak Ridge

We are Adirondack 46ers, which is an organization of hikers who have climbed all forty-six of the traditionally recognized High Peaks of the Adirondack Mountains. We are referred to as 46ers. We completed the 46 peaks on August 26, 2000. Click our picture for more information.

Debbie, what a tasty-sounding treat for autumn. I've never even heard of pumpkin cobbler. The recipe sounds fantastic and is on my short to-make list.
ReplyDeleteI love pumpkin! Unforunately, John doesn't so I like the idea that it can be frozen into individual servings pour moi :) Love the cute wish dish.
ReplyDeleteFirst of all I love those ramekins - they are beautiful. I too am ready for fall comfort foods and this one sounds wonderful. Never heard of a pumpkin cobbler before but it does sound good :)

ReplyDeleteDebbie, I've made this... it is so good! My recipe was called pumpkin crunch, but the same ingredients. Definitely not a diet food!
