Salmorejo ..... It's Tomato Season


 Couldn’t be easier and more delicious. This is a great summer appetizer soup that my friend raved about while traveling in Europe last month Salmorejo

There are several recipes on the internet, so I had choices of which recipe to follow. The recipe I chose was from a woman that lives in Spain. 

"Salmorejo is a cold tomato soup that is famous in the south of Spain. It’s similar to gazpacho — but thicker and creamier.

Salmorejo is something you’ll find on menus throughout Spain, but the best salmorejo is always found in the south. On a hot day, there is nothing more refreshing and satisfying than a bowl of cold salmorejo– it’s a must-try if visiting Spain!"

OR.......If you are looking for a quick tomato sandwich, try this! 

Tomato-Feta Sandwich
1-2 ounces feta, crumbled
1-2 T mayonnaise
favorite bread, toasted
sliced tomatoes
basil or chives (optional)
salt & pepper to taste

Mix mayonnaise and crumbled feta, spread on toasted bread. Top with tomato slices and basil or chives if using. Enjoy!

  4. What a wonderful way to use tomatoes from the garden! I ate lots of paella and drank plenty of sangria but never had salmorejo when I visited that region of spain (many years ago). Must try!
