The Scuttlebutt...Happy September

Happy September and new school year! August ended with a meal I won't soon forget so I want to share it with you. Perfect balance of flavors and focaccia bread. Since it was hard to keep everything from falling out, I ate it open faced. Lovely fillings. Here is the link to The Scuttlebutt Recipe on Food52 and you will see that you first pickle the beets, onions and carrots ahead of time. I've also been using the pickled vegetables on garden salads as they are very flavorful. 
The spices used for pickling looked so pretty :-) 





August bouquets were plentiful, and my dahlias are blooming their hearts out in the garden. 


Here's a quick salad recipe that I promise you will enjoy. The ingredients are so simple and fresh....and the feta, lemon and dill really stand out. I've been making this all summer, and you can add leftover diced chicken if you want more protein.

I did not need another baking pan, but this Nordic Ware scone pan was marked down when I went to Sur La Table. We have two grandchildren that live in the Albany area so when we visit, we sometimes go shopping at Stuyvesant Plaza. I  only eat scones if they are made with this Scone recipe.
My oldest grandson Xavier has found his favorite sport to play and we enjoy going to the games. Yesterday was his first game, and they have practiced for the entire month of August. Kudos to the coaches who are so dedicated to the sport.
Our sweet granddaughter Claire turned four last week.
