This and That January

There are still apples hanging out in my fridge, and Dorie’s French Apple Cake via David Lebovitz is my favorite thing to bake with apples. Besides apple pie.  

Hope you are all doing well, and I know some of you had frigid temperatures and snow in January.
What I'm Reading: It's been years since I used my Moosewood Cookbook, so I pulled it off the bookshelf and reconnected with it. I actually read the entire cookbook! We can buy locally grown food all winter so I picked up a bag of assorted mushrooms that are grown on logs (indoors) and made this delicious Hungarian Mushroom Soup

What I'm Watching:   The Buffalo Bills game! They are playing on Joe's birthday (January 26), and we will be watching from Key West. This is the clearest path the Bills have had to the Super Bowl in the Josh Allen era, and the time is NOW! Fingers crossed for my grandson Xavier, his favorite team and he is very vocal during the game :-)


What I'm Working On:  I committed to a challenge to hike 100 miles from November 1st to February 28th.  So far I have completed 88.45 miles of the Winter 100 Challenge and have started the 365 mile challenge (in 365 days). 

What I'm Loving:  I have been snowshoeing or cross skiing most every day. This is me....'Friluftsliv'.  It's a word used by Swedes, Danes and Norwegians. It translates literally as ‘fresh-air life’, and is all about embracing the great outdoors whatever the weather, being active, and immersing yourself in nature.

I read on a blog that even if you don’t share online, she encourages us to keep a list of what we're up to each week. It can be informally as a list of what you’re reading, what you’re watching, what you’re loving, and what you’re working on. Keeping a simple record will make us more observant, intentional, and aware.  It’s also fun to look back to see how we’re spending our time and what we’re taking in. I'm giving it a try.

  1. I love how you embrace winter, Deb. This is the first time ever that I have had trepidation in getting out to walk, due to the ice everywhere (and, admittedly, fear of falling at this point). We remain blanketed beneath the snow with ice from Jan 6. Your trip to KW will be a perfect way to celebrate Joe's bday and the Bills' potential win. I do keep notes of daily activities, it's who I am. 😊 Your soup looks yummy!

  4. As always, I'm enjoying your posts, pictures, goals and adventures. Glad you are working at being retired and providing ideas that most may not think of but might enjoy. Enjoy Key West, watching the Bills win and celebrating Joes birthday. Sounds like a win-win all the way. 🎂🥳🏈🦬

  6. You have a beautiful area to enjoy the great outdoors, Deb! You are fortunate also to find like-minded people to enjoy it with you. It will be fun to watch the playoffs, even if our Packers are in them. Good luck to your Bills! I just made mushroom soup recently also! We love it. Those are some beautiful mushrooms you found. I'll have to find the recipe to see how Hungarian Mushroom Soup differs from my recipe.
