Snow Globe December

We have received over 30" of snow so far, and schools have been closed three times and it's only December. Joe loved snow days, and I still feel a little magic in the words "Snow Day". My kindergartner granddaughter is quickly learning about snow days and now wants one every time it snows :-) I don't love the cold, but I do love how beautiful snow is. This is very early for us, and we typically have to wish for a White Christmas. This year I am wishing for a 60 degree and sunny day lol. The photo above was taken at my friend's house.
Today I'm sharing a favorite family recipe that my hubby makes called Buffalo Chicken. It's very tasty and will remind you of Buffalo chicken wings. I am asked for the recipe every time we serve it to guests (our entire family makes it). I'm putting it on the blog so I have easy access to the recipe.

Joe's Buffalo Chicken
8 boneless chicken breasts (we don't pound them)

Mix together:
1 small bottle of Frank's hot sauce (6 oz.)
1/2 stick of melted butter (if you want the sauce milder, use more butter)
3 cloves garlic (minced)
plain bread crumbs
vegetable oil

Dip chicken breasts in bread crumbs, and fry in batches in vegetable oil until golden brown. Place fried chicken in a baking dish, and pour the sauce over it. Bake for 25 minutes at 350 degrees.

We serve this with rice or mashed potatoes and a vegetable. Joe made it last evening while I was out to dinner with the girls, and he used ready made mashed potatoes from the grocery store.
Christmas snacks would not be complete without "Chex Mix". There was a promotion last year and if you bought certain ingredients for the Chex Mix and sent your receipt, they would ship you a free tin. It's the cutest.

It's also the time of year when you might have a cookie with your cup of coffee or tea. My favorite cookie in December is ginger snaps and we always bring some to NYC to share with Joe's family.
If you have the ChatGPT app, you can ask it to "make this photo Polar Express". I've done several for friends that have dogs, and they look pretty darn close. The photos with people's faces do not look good at all so it's best to not show a face like in the photo above. The tree in the photo above is in NYC at Lotte Plaza Hotel, but I asked ChatGPT to make it Polar Express in Lake Placid with my traveling tote.
Here's one more, "polar express" photo and the original photo is below for reference. Claire and I were making S'mores cupcakes for a baby shower.  You can see that ChatGPT added a plate with a cupcake on it.

The finished cupcake
My daughter-in-law Maria teaches Spanish in a catholic school, and on December 12th the students learned about the celebration on the Feast Day of Our Lady of Guadalupe which is a massive event honoring Mexico's patron saint. Maria invited us out to dinner and I enjoyed a tamale, enchilada and a margarita. Maria ordered her drink speaking in Spanish to the waiter so I'm not sure what it was but it was made with coconut milk and strawberry and was so pretty.
Wishing you a joyful and peaceful solstice pause and a happy new year.

You and Claire made some darling cupcakes and I’ll bet everyone loved them. I haven’t tried ChatGBT, but I keep hearing about the wonders of it. How nice that Maria taught the children about the Feast Day of Our Lady of Guadalupe. Happy Sunday, Deb! ❤️

  4. That recipe sounds delish! Love the AI photo of you and the tree, and I see what you mean about the facial changes. We've gotten 3 snow days also, and today all 55 counties in WV have no school for the snow/subfreezing temps. Tomorrow it's supposed to warm to 45° for us, certain to melt most of the frozen snow on the ground right now.
